Lasagna Cupcakes

You thought the cupcake craze would just fizzle out? No chance. It's just moving away from sweet and into the direction of the savory.

At Trader Joe's in New York, they're selling frozen turkey meatloaf muffins, topped with spinach and mashed potatoes, which, by all accounts, are particularly good. Meanwhile, in Los Angeles, the entertainment industry's latest obsession is lasagna cupcakes.

Lasagna cupcakes, or individual lasagnas in the shape of cupcakes, are the creation of Heirloom-LA, a catering company based in Eagle Rock, a town near Silverlake. About 18 months ago, Matt Poley, a partner in the company, said a parent had requested macaroni and cheese for a children's party, "but doesn't a big dish of macaroni and cheese look so unappealing?" he asked on a recent visit to his kitchen. "So we made individual macaroni and cheese, and we realized we could do this with every type of lasagna."

"The truth is," Mr. Poley went on, "it's kind of hard to dog on a lasagna cupcake. As long as they aren't scalding hot, you can eat them with your hands. In fact, we encourage it. You might get some spillage, but not a lot."

The lasagna cupcakes are so great "because they're all corners, they're a wall of crust," said Jenni Konner, a television writer, who has regularly served and seen them at parties around town. "And I hate the cupcake trend."

On a recent afternoon, Mr. Poley demonstrated how to make an artichoke lasagna cupcake. The pasta is cooked from scratch with eggs and flour; then it goes into a pan, and is cut into sheets. Three sheets, about half the size of a ruler, are placed in a cupcake dish, crossed inside the pan. Three layers of mozzarella cheese, béchamel cream sauce, artichoke, some wild arugula and a little parmesan cheese are added. Then the pasta is folded over, and "there you go, that's a lasagna cupcake," he said.

Mr. Poley makes the lasagna cupcakes in all different sorts of flavors. A dozen of them are standard, including the mac and cheese, a Bolognese and one with short ribs. Others depend on the season.

"It's all market driven," said Mr. Poley, who is working on a cookbook tentatively titled "Animals and Cupcakes.

"When corn rolls around, we'll make them with corn. Or sweet peas. It's really hard to do pumpkin year-round. Maybe we'll come back from a party with some pork ribs that went uneaten and make some barbecue pork rib lasagna cupcakes. That's where our beef stroganoff idea came from. We just lasagna cupcake'd it."

Dana Fox, the screenwriter of "Couples Retreat" and "What Happens in Vegas" had lasagna cupcakes at her wedding in Virginia. "Brides aren't supposed to eat, but I couldn't stop," Ms. Fox said. "They're uniformly delicious. If you thought a beet lasagna cupcake was disgusting, you'd be wrong. This just in: it was delicious, too."

Mr. Poley said that Heirloom sold about 10,000 lasagna cupcakes in December. At the moment, his catering kitchen—which has 15 people making lasagna cupcakes, as well as new offerings like tamales and pizza bread pudding —can produce 200 to 300 a day. The cupcakes are available in freezers around the city of Los Angeles and for mail order to—yes, New York City—in frozen packs at the company's website.

“Cupcake Wars” Is Pitting Vegan Cupcake Against Vegan Cupcake

We told you about how excited we are for an upcoming episode of Cupcake Wars featuring Sticky Fingers vegan bakery. The Food Network show pits cupcake against cupcake in a battle to win $10k and the opportunity for bakers to feature their tasty treats at a one-of-a-kind gig.

So, now it’s time to meet the competitor!

On March 8th C’est La V Bakeshop and owner Kim Garr will get a chance to show off their scrumptious product and help demonstrate that being vegan doesn’t mean you have to sacrifice the good things in life (aka cupcakes).
 

The Los Angeles based bakery has featured all natural, organic, and vegan baked goods since 2009, and has been featured at the Veggie Pride Parade, WorldFest, the Animal Acres’ Gala and the Hollywood Farmers’ Market. But Garr’s sweet treats are also a favorite of Hollywood A-listers, and have graced the sets of shows like HBO’s Entourage.

Some of her specialty cupcakes include the “Candy Cane Joe-Joe,” which is cookie, cupcake, and candy cane all in one, and the spicy pumpkin cupcake with cream cheese frosting. Delicious!

If history is any indication, cupcake shops may always be around, there will always be a loyal following,but the frenzied trend may abate. Think of yogurt shops - in the early 80's, they were popping up all over the place and then, they fizzled. Will this happen with Cupcakes? I believe so. By the way, yogurt shops are back ... big time.

Cupcakes became so popular over the last few years that upscale bakeries sprang up across the nation to offer them in red velvet, mocha and chai latte. A fan site featured pictures of cupcake tattoos on aficionados. But new versions of the all-American favorite — pie — are increasingly popping up at bakeries and restaurants. Pie has replaced cake at some weddings. There are pie happy hours and pie shooters served in shot glasses. Read more in today's Business section.

This is an amazing story: From unemployment to owning a cupcake business. I was not aware of such a program. This program should have been implemented in all of the states. We don't hear enough about these life changing programs.

Woman opens her own business after entrepreneur 'boot camp'

 Nanaimo's Medina Mayes never dreamed a conversation about cupcakes with her employment counsellor would lead to her opening her own business in the city's downtown core.

Mayes, owner of Fitzwilliam Street's A Wee Cupcakery, was unemployed after working a series of jobs, ranging from being a yoga instructor to a furniture saleswoman, and was looking for direction in her life when her counsellor suggested she participate in a federally funded program to help those collecting employment insurance establish their own businesses.

The 10-week self-employment program is offered through Business Works on Skinner Street, a subsidiary of the Ethos organization which has eight federal contracts to offer the program in B.C.

Mayes attended a two-week "boot camp" in which she and other budding entrepreneurs are taught about what's involved in starting their own business and how to develop a business plan.

She then spent the next eight weeks developing her plan with the assistance of program instructors and it was approved by a panel, consisting of local business people and program coordinators, which allowed her to open her business while still collecting topped-up EI benefits plus financial assistance from Business Works.

"I'm celebrating my first year in business on Jan. 20 and I'm just so pleased and excited that Nanaimo has embraced the cupcake craze that I hoped it would when I started," Mayes said Thursday while preparing her sweet treats as customers dropped by looking for their favourite snacks.

"It's pretty scary to start your own business, especially when you're unsure just how to go about it, but collecting EI proved to be a saving grace for me. Business Works taught me how to do it and saw to it that I had an income for much of my first year in business. I had a dream and they helped me make it a reality."

Jamie Lawlor, co-ordinator of the program, said about 300 people collecting EI from the central Island region have participated in the program since it was established in Nanaimo four years ago, and about 85% of those who received approval from the panel to begin their businesses have proven successful.

Festive Birthday Cupcake Cones: More Frosting Equals Better!

This is a busy party season for everyone, but in my family, this is especially true.  No sooner is Thanksgiving over, but its time to celebrate my eldest daughter’s birthday, followed within less than a week by my husband’s birthday bash.  That’s why we have a cake theme happening at Making Life Delicious this week.

I made these superfun treats for my daughter Kate’s 9th birthday.  I was inspired by Kim Ima, proprietor of The Treats Truck in NYC.  A cupcake contained within an ice cream cone is nothing new, but Kim took it to a whole new level by incorporating more evenly-distributed frosting.

My philosophy is that cake exists primarily as a frosting delivery system, so I was most excited by her innovation.  Want to know how she did it?   This picture might give you a hint.

At my 9-year old daughter’s request, I made two kinds of cupcake cones…yellow cake with chocolate frosting and yellow cake with vanilla frosting.  These classic birthday combos were a huge hit with the 8- and 9-year-olds at the party.  However, this delicious new cake-to-cone method could be used for many different cake, frosting and filling combinations from the simple to the sophisticated.  Pick your favorite and go to town.

Festive Birthday Cupcake Cones
Print-Friendly Recipe

YELLOW CAKE

  • 1 cup (2 sticks) unsalted butter, softened
  • 2 cups sugar
  • 4 large eggs, room temperature
  • 1 1/2 cups self-rising flour
  • 1 1/4 cups all-purpose flour
  • 1/4 teaspoon kosher salt
  • 1 cup whole milk
  • 1 teaspoon vanilla extract

CHOCOLATE AMERICAN BUTTERCREAM

  • 1 cup (2 sticks) unsalted butter, room temperature
  • 6 oz. bittersweet chocolate, melted and cooled to lukewarm
  • 3 1/2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 1 large pinch of kosher salt
  • 1-2 tablespoons whole milk

VANILLA AMERICAN BUTTERCREAM

  • 1 cup unsalted butter, room temperature
  • 1 large pinch of kosher salt
  • 2 teaspoons vanilla extract
  • 2-3 tablespoons whole milk
  • 4-5 cups powdered sugar

OTHER

  • Ice Cream Cones (I used Baskin & Robbins)
  • Sprinkles

To make the Yellow Cake portion of the cupcakes, preheat the oven to 350 degrees F.  Grease a half-sheet pan (13″ X 18″) and then line it with parchment paper.  In the bowl of a standing mixer fitted with a whisk, cream the butter and sugar until fluffy (about 3 minutes).  Add the eggs one at a time, beating well after each addition.  In a small bowl, combine the self-rising flour, all-purpose flour and kosher salt.  In another small bowl, combine the whole milk and vanilla extract.  You will be adding the flours in four parts alternating with the milk/vanilla mixture and beating well after each addition.  Flour, milk, flour, milk, flour, milk, flour.  Got it?

Spread the batter in the prepared pan and bake until the top springs back when lightly touched, about 20-22 minutes.  Set the pan on a rack to cool.

Mmmmmm.  Now its time to make frosting.  Yeah!

If you are making the Chocolate Buttercream Frosting…Beat the butter until creamy, about 2 minutes.  Add the melted chocolate and continue to beat.  Then add the powdered sugar, vanilla, a big pinch of kosher salt and about 1 tablespoon of whole milk.  Beat until spreading consistency, adding an additional tablespoon of whole milk, if necessary.

If you are making the Vanilla Buttercream Frosting…Beat the butter until creamy, about 2 minutes.  Add 3 cups of the powdered sugar, vanilla, a big pinch of kosher salt and about 2 tablespoons of whole milk.  Then add an additional 1-2 cups of the powdered sugar (depending on how sweet you like it).  Beat until spreading consistency, adding an additional tablespoon of milk, if necessary.

To assemble these cupcake cones, put a scoop of frosting and in the bottom of the cone.  Tap the bottom of the cone to pat down the frosting.  Then take a round cutter the size of the inside of your cone (for me that was a 1.5-inch diameter) and cut out a cake round.

Place in your cone.

Fill to the top with more frosting.

Cut out a slightly larger cake round for the top of the cone (2 inches in diameter).

Frost the top of the cupcake making a dome like an ice cream cone.  Top with sprinkles because everybody likes sprinkles.  :)

Yummm!

Transportation of these cupcake cones is a challenge.  Once filled, they are top-heavy.  So if you need to travel with them, I suggest doing so in a popover pan.

The founder of Sprinkles, the world’s first cupcake-only bakery, Nelson splits her time between running ten Sprinkles locations alongside her husband Charles, opening 15 more in coming months, judging other bad ass bakers on The Food Network’s Cupcake Wars and raising a three year-old son and a five week-old baby. With the days stretched thin, we wondered if, for Nelson, there really is a sweet reward at the end.
  

Let’s be honest – you taste cupcakes for a living. How did you get that job and how can we get it too?

Nelson: [laughs] If someone had told me when I was growing up that I would have the job of cupcake judge wherein I would be made to sit for hours and taste people’s cupcakes, I would have said, “That’s impossible!” What’s funny is we have a lot of kids who watch the show and a lot of them say to me “I want to do that when I grow up.”

And what do you tell kids who say that they want to have your job?

Nelson: This generation of kids is growing up watching the Food Network, they have an interest in cooking and being in the kitchen and I say “Keep it up!”

So what is the sweets policy in your house?

Nelson: I try to do my recipe development when my 3 year old is at school or on a play date. My whole philosophy for kids and for everyone is moderation, so for him it’s still considered a treat which it should be, particularly at his age.

With a huge business and two kids, how are you staying sane during the holidays?

Nelson: Planning is key. I always have some sort of cookie dough in my freezer. That’s the wonderful thing about baking–you can freeze things and bake them off, not anything we do that at our store, but in my personal life I’ve found that it can be a life saver.

Do you have any nutrition rules for your kids?

Nelson: Broccoli is a staple in our household and there’s no desert unless the broccoli is eaten. Charles and myself, we lead very healthy lifestyles.  I do believe in enjoyment in life too. That was part of the inspiration for Sprinkles, making this thing that someone might buy at the supermarket and eat really quickly and not think anything of because it wasn’t special, to make it special and make it with good ingredients and make it beautiful so that if you had one, it would satisfy you and you would take care eating it and you would eat less ultimately.

Candace’s Peanut Butter Cupcake Recipe

CAKE
Ingredients:
* 1 cup unbleached all purpose flour
* 1 tsp baking powder
* ¼ tsp salt
* 6 tbsp unsalted butter, at room temperature
* ¾ cup smooth all natural peanut butter, at room temperature
* ½ cup packed dark brown sugar
* ½ cup sugar
* 2 large eggs
* 1 tsp vanilla extract
* ½ cup whole milk
* 2 cups semi-sweet chocolate chips

Directions:
Preheat oven to 350 degrees. Combine milk and vanilla in small bowl. Combine flour, baking powder and salt in bowl. Beat butter and sugars in mixer until light and fluffy. Add eggs and blend until smooth. Slowly mix in peanut butter. Add half the flour mixture and blend slowly. When fully incorporated, add milk mixture. Continue to blend slowly. Add remaining flour mixture and mix on low speed just until incorporated. Add chocolate chips and fold in by hand. Scoop into 12 lined baking cups and bake for about 22 minutes, or until tops spring back when lightly touched and the edges are golden brown.

FROSTING
Ingredients:
* 6 ounces unsalted butter, room temperature
* 1/2 cup confectioners’ sugar
* 1/2 teaspoon salt
* 1 cup creamy peanut butter, natural (or if you want a smoother look, go not-natural)
* 1/2 teaspoon pure vanilla extract
* 1/2 cup whole milk

Directions:

Combine sugar and salt in bowl. Combine milk and vanilla in bowl. Beat butter and peanut butter in mixer until smooth and creamy. Alternately add sugar and milk mixture until fully incorporated. Add additional milk for a softer consistency. Frost on top of cooled cupcakes.

The Nate Berkus Show, hosted by the popular design expert and New York Times bestselling author, who has appeared regularly on The Oprah Winfrey Show, recently invited local 16-year-old Blakely Colvin of Solvang, to share her non-profit “Cupcakes for Cancer” story on national television.

The new NBC Nate Berkus program is a daily syndicated multi-topic and multi-segment series that presents a broad range of subjects and guests based on lifestyle, entertainment, inspiration and personal transformation. He began hosting his own show, which debuted Sept. 13.

In the fall of 2007, Blakely, created her own Non-Profit dubbed Cupcakes for Cancer.

Since the inception of Cupcakes for Cancer three years ago, Blakely, with the help of family and friends, has raised $65,000, (all with sweet cupcakes) granted seven wishes for ill children here on the Central Coast through The Make a Wish Foundation of the Tri-counties (Ventura to San Luis), donated $10,000 to The Teddy Bear Cancer Foundation of Santa Barbara, gifted a $1,000 college scholarship to a deserving high school graduate, and started a national outreach campaign “Frosting Hope Across America.”

The “Cupcakes for Cancer” segment of The Nate Berkus Show will air at 2 p.m. Tuesday, Jan. 11 on NBC channel 6 KSBY.

Who doesn’t love Red Velvet Cupcakes, intoxicating & dreamy!

Ingredients

  • 2 1/2 cups all-purpose flour
  • 1 1/2 cups sugar
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon cocoa powder
  • 1 1/2 cups vegetable oil
  • 1 cup buttermilk, room temperature
  • 2 large eggs, room temperature
  • 2 tablespoons red food coloring
  • 1 teaspoon white distilled vinegar
  • 1 teaspoon vanilla extract

For the Cream Cheese Frosting:

  • 1 pound cream cheese, softened
  • 2 sticks butter, softened
  • 1 teaspoon vanilla extract
  • 4 cups sifted confectioners’ sugar
  • Chopped pecans and fresh raspberries or strawberries, for garnish

Preheat the oven to 350 degrees F. Line 2 (12-cup) muffin pans with cupcake papers.

In a medium mixing bowl, sift together the flour, sugar, baking soda, salt, and cocoa powder. In a large bowl gently beat together the oil, buttermilk, eggs, food coloring, vinegar, and vanilla with a handheld electric mixer. Add the sifted dry ingredients to the wet and mix until smooth and thoroughly combined.

Divide the batter evenly among the cupcake tins about 2/3 filled. Bake in oven for about 20 to 22 minutes, turning the pans once, half way through. Test the cupcakes with a toothpick for doneness. Remove from oven and cool completely before frosting.

For the Cream Cheese Frosting:

In a large mixing bowl, beat the cream cheese, butter and vanilla together until smooth. Add the sugar and on low speed, beat until incorporated. Increase the speed to high and mix until very light and fluffy.

Garnish with chopped pecans and a fresh raspberry or strawberry.

Cook’s Note: Frost the cupcakes with a butter knife or pipe it on with a big star tip.

The ladies of Philadelphia’s Sweet Freedom Bakery will be showing off their goodies. Tonight on Food Network’s CUPCAKE WARS the bakery’s co-owners will show off their skills against three other bakers. In the competition that pits cupcake against cupcake, the victor after three elimination challenges receives a $10,000 prize and is featured at the episode's main event.


Last season, LA-based Vegan Chef Chloe Coscarelli was one of eight grand prize winners. A major upset to the competition in episode three, she proved that vegans can bake a sweet cupcake too. Her Chocolate Strawberry Shortcake seduced the judges in the “Match Making Party” episode.


In season two, Allison Lubert and Heather Esposito will elevate the novelty a little higher. In a field of conventional bakers, Lubert and Esposito consider more than the aesthetic. Their cupcakes are not just vegan but allergen-free, meaning no gluten, dairy, eggs, soy, corn, peanuts, or refined sugar.


Tonight’s episode is “Hard Rock,” with cupcakes being made for Hard Rock Cafe's Pinktober concert event. Coming up on Sweet Freedom Bakery's one year anniversary, joining the show’s winners' circle would surely be a huge triumph to take into the New Year.

Cupcakes for the Endangered Species Coalition

Cupcakes are more than a trend ... they are been used for fund raising, bringing awareness to a cause, such as saving the Polar Bears.

“WE are saving panda bears here tonight, right?” asked Waris Ahluwalia, the jewelry designer. “Arden specifically told me that, if I showed up, I would save at least one panda bear.”

Mr. Ahluwalia was referring to Arden Wohl, the young socialite who was hosting a benefit party on Monday for the Endangered Species Coalition, a conservation group with a knack for gathering well-connected people. The awareness-raising event was held at the Little Cupcake Bakeshop in NoLIta, a carbon-neutral bakery where old blue jeans are used for insulation.

The guest list promised Ms. Wohl’s cool friends, including the actress Leelee Sobieski and her husband, the designer Adam Kimmel; the actress Stella Schnabel; and the artist Tom Sachs. It was Mr. Sachs who had originally persuaded Ms. Wohl to get involved with saving animals.

“I surf in the Rockaways, so I see pollution firsthand,” Mr. Sachs explained. “It’s disgusting how many condoms and used needles I have to dodge.” He also wanted to correct Mr. Ahluwalia. “The organization focuses on North America, so the panda doesn’t really fit,” said Mr. Sachs, who wore a gray sweater that appeared to be ravaged by moths — not endangered in New York. “It’s the ambassador animal for wildlife because there is no animal more charismatic than the panda.”

What is the ambassador animal for North America? “The polar bear,” squealed Ms. Wohl, who was studying the cupcake display case. She wore a red beret, miniskirt, patterned tights and red suede oxford shoes. “Coming from New York and privilege, you can’t just sit on the world and let it fall apart.”

“I want to go to Manitoba and see all the polar bears,” she added.

Ms. Wohl, who is 27 and the daughter of a comic book author and a real estate mogul, used to make short films, but now bakes pastries as a recent graduate of the French Culinary Institute. For the party, she made savory potato focaccia cupcakes with cream cheese and goat cheese icing. “I think pastries are an extension of storytelling,” she said. “It’s not that far off. It’s very social.”

The party was intimate and felt more like a get-together at someone’s apartment. Mr. Ahluwalia sat at a nearby table, under a stenciled sign that read “Dolphins for Coney Island Cupcakes,” and dug into one of Ms. Wohl’s cupcakes with a fork. “Sea salty,” he concluded.

Mr. Sachs ate his standing up. “At first, it didn’t make sense in my brain that a cupcake should smell like pizza,” he said, “but I gobbled the whole thing down.”

By 8:30 p.m., Ms. Schnabel and Ms. Sobieski hadn’t showed up, but Ms. Wohl, who had been nursing hot tea for a cold, said she had to go home.

Mr. Ahluwalia was heading out to visit friends in the neighborhood, and doggy-bagged a few treats for the hosts’ children. “By the kids eating these cupcakes,” he said, “they would have also helped a panda bear, right?” Technically, it’s the polar bears. But yes, perhaps.

CLIFTON – How do you raise money for a good cause? Competitive eaters Maria "Incredible" Sulkin and Joel "The Cannon" Podelsky plan to raise a few bucks by filling up on pizza.

Sulkin, a 14-year Clifton resident, and Podelsky, who lives in Laurence Harbor, will be hosting Pizzathon 2011 at Johnny G’s Pasta and Pizza in Toms River on Jan. 9, 2011, at 2 p.m.

Sponsors can choose to back one or both eaters and will donate roughly $25 to benefit the National Multiple Sclerosis Society for every slice eaten by the duo.

"I’m telling everyone I’m going to eat at least 12 slices," said Sulkin, "but my goal is to eat two full pies."

The pies are regular sized, plain, cheese pizzas and each slice must be consumed in its entirety to count – that includes the crust. There is no time limit, but the two eaters will be looking to ingest quickly.

Sulkin’s first competitive eating competition was a cupcake eating contest that took place over the summer at La Bonbonniere Bake Shoppe in Edison. Sulkin finished 10 cupcakes in 3 minutes and 25 seconds, finishing second to Podelsky, who finished 10 cupcakes in 1 minute and 54 seconds.

After the event, Sulkin and Podelsky kept in touch, became close friends and began discussing the idea of having a fundraiser.

The pair decided pizza would be a perfect food to have a walkathon-style contest where sponsors could pay money for every slice eaten.

Choosing an organization to benefit was the easiest part, Sulkin said.

"Joel’s girlfriend has multiple sclerosis and my best friend’s mother has multiple sclerosis," said Sulkin, "which is why we decided on [The National Multiple Sclerosis Society]. But any good cause would have been fine by me."

I am a BIG fan of Cupcake Wars on the Food Network. I saw the episode with the sisters. Some may have thought they were the underdog but confidence trumps knowledge. YEAH!!!

Pair sets up shop in Rancho Cucamonga

  

 RANCHO CUCAMONGA - It's uncanny what a little Food Network treatment can do.

Sisters Christiana Grammer and Rebecca Ybarra, two real estate agents turned cupcake experts, knocked out their competition on a July episode of "Cupcake Wars," a cable reality series pitting purveyors of the miniature desserts against each other.

Since then, the Etiwanda High graduates have opened up shop at Victoria Gardens and are routinely approached by strangers who want their autographs.

Located in the mall's food court, Suite 106 Cupcakery typically sells eight varieties of cupcakes every day. This week, in addition to their usual double vanilla, double chocolate and red velvet, they also had banana foster - a banana cake topped

with cinnamon cream cheese frosting, drizzled with caramel rum sauce and topped with a homemade churro.

Unlike most bakeries, this one keeps long hours because it's part of Victoria Gardens. In the days leading up to Christmas, the shop will have 12-hour days.

"There's no sleep when it comes to cupcakes," said Ybarra, 31.

On a slow day, the sisters can sell 500 cupcakes, which typically go for $3.25 each. On a busy Sunday, however, 2,000 cupcakes will leave the premises.

How do they keep up with such a dizzying schedule?

"Our diet consists of Rock Star, Red Bull and cupcakes," Ybarra said. "It is making us delirious."

The sisters have been on a sugar high since the "Cupcake Wars" victory, which earned them $10,000.

Grammer, 33, a self-taught baker, likened her television debut to an out-of-body experience.

"I thought we were going home in the first round," she said.

The siblings stuck with it, though, beating out competitors who had more confidence and multiple brick- and-mortar stores. At the time, Suite 106 Cupcakery was a fledgling online startup, but according to the judges, the sisters had a certain je ne sais quoi that outshone the more-experienced bakers.

One competitor, after learning that the sisters were from quaint-sounding Rancho Cucamonga, told them, "We're not in Kansas anymore."

"We were scared," Grammer said.

In the end, they took home the grand prize, and they were ecstatic.

"Rebecca jumped on me," Grammer said.

"I did," Ybarra said. "I tackled her."

Since then, the cupcake duo has been on a tour, selling and donating their creations to community groups. Then they came across an opportunity to open at Victoria Gardens during the Christmas season. The two are now contemplating staying there permanently.

One enticing feature of their current location is the window front facing North Mainstreet. It allows shoppers to peek in to see the variety.

Their top seller is red velvet, which during the Christmas season can come with peppermint frosting and crushed candy canes.

"People freak out about it," Ybarra said.

One customer was willing to wait two hours for a red velvet cupcake. Another fan purchased the last one of the day and later sold it for $15.

There are plenty of other flavors, though, including pumpkin, chocolate candy cane and peanut butter and jelly.

Some flavors happen by accident. While satisfying a late-night craving, Grammer accidentally reached for the banana cinnamon cream cheese to spread on her pumpkin cake. It was an a-ha moment that became the tropical pumpkin cupcake, which was sold during the warmest days of a Southern California winter.

"We know that when you mess up, it's usually genius," Ybarra said.

There are also what the sisters jokingly call "iron cupcakes," creations with seemingly disparate flavors inspired by Iron Chef.

One apple cupcake is topped with an apple spiced buttercream and filled with pieces of apples poached in a balsamic vinegar reduction.

Another cupcake is made with vanilla batter and pieces of bourbon-soaked figs, topped with a vanilla frosting dusted with brown sugar. Hidden inside the cake is a chunk of cheesecake made with goat cheese.

It's no wonder that cupcake fans have developed into a cultlike following. The sisters communicate with their customers daily via Facebook and Twitter. They set aside about 25 cupcakes every day for followers who come to the store and whisper a secret word that's posted on the social media sites.

"One guy was asking at 5 a.m. on Facebook, `What's the secret word?' and I was like, `We don't open until 10 a.m.' "

Maybe that's just the kind of attention you get when Food Network is attached to your brand. Grammer and Ybarra are now flirting with plans to expand their business to Chicago, Miami and even Japan. It seems pretty clear that neither of them are in Kansas anymore.

The Food Network is also taping a documentary series that will feature Grammer and Ybarra.

Black Bottom Cupcakes: Chocolate & Cheesecake in One!

I had Black Bottom Cupcakes at a birthday party recently and haven't been able to get them out of my head ever since. It's devil's food cake with a cream cheese-chocolate chip filling. The best part? There's no frosting -- so they're a breeze to transport, and they're so decadent you won't even miss it!

For cream cheese filling

  • 3/4 pound (one and a half 8-ounce packages) cream cheese (not softened)
  • 1/2 cup sugar
  • 1 large egg, at room temperature
  • 1/3 cup miniature semisweet chocolate chips

In a medium-sized bowl, beat the cream cheese and sugar together until smooth. Add the egg and beat well. Stir in the chocolate chips. Set aside.

For cupcakes

  • 1 3/4 cups all-purpose flour
  • 3/4 cup sweetened Dutch process cocoa
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup vegetable oil (preferably canola)
  • 1 cup sugar
  • 1 cup buttermilk
  • 2 teaspoons vanilla extract

Combine the flour, cocoa, baking soda, and salt. Set aside. In a large bowl, on the medium speed of an electric mixer, beat together the oil and sugar.

Add the dry ingredients into two parts, alternating with buttermilk and vanilla, and making sure all the ingredients are well blended.

Carefully spoon the cupcake batter into the cupcake liners, filling them about two-thirds full. Drop a small scoop (about 1 1/2 tablespoons) of the cream cheese filling on top of each cupcake.

Bake for about 30-35 minutes at 350, or until a cake tester inserted in the center of the cupcake comes out clean.
